OPRAH WINFREY got serious--and gradually dropped a reported 75 pounds--before turning 50 last year. What works for her: no alcohol and no "white food" (i.e., flour and sugar).

COURTENEY COX ARQUETTE: Hollywood has never lacked for fitness fads, and the oddly named Budokon is the latest. A heart-pumping mix of martial arts, yoga and meditation dreamed up by former bodyguard and fight-scene choreographer Cameron Shayne, Budokon has already gained several celeb followers, including Courteney Cox Arquette and hubby David Arquette. "I was training David while Courteney was doing Pilates, and she got bored and started working out with us," says Shayne, a yoga instructor who also holds black belts in tae kwon do and karate. "The two arts naturally coincide," he says about his hybrid workout. "It's about cultivating something more spiritual than just 'Let's get in shape.'"

TERI HATCHER stays fit with erotic dance moves learned at L.A.'s S Factor studio. "It's great for your muscles and it's really empowering," Hatcher has said, "because it's not about turning a guy on."

NICOLE RICHIE, 23, works out on an Indo Board, a sort of landlocked surfboard that tones muscles and teaches balance.

JESSICA SIMPSON When she needed to get into butt-kicking shape for "The Dukes of Hazzard," Simpson turned to childhood pal Mike Alexander. "Jessica wanted a more muscular butt," says the 26-year-old Texan, who got his friend's assets looking good with 45 minutes of lunges and squats, five to six days a week. "Most women think they have to do tons of cardio, but that doesn't shape muscle," explains Alexander, a trainer at Beverly Hills' Sports Club/LA. "Jessica's goal wasn't to lose weight but to define her legs and glutes."
